GOI CA TRICH
Goi ca trich The fish used for processing this dish is not big and rare but small one like the herring . Usually the herring is often processed as canned fish due to its rich fat, soft and sweet meat.
Thanks to those features and special cooking method of the restaurant, many delicious dishes have been made from the herring. To make such dishes, the herring must be very fesh. It is easy to be rotten due its flat and soft feature, therefore, after being caught, it must be processed immediately.
The chef cut sides the fish foe the fillet that is still bright with sea blue to make Goi Ca Trich. Mixed with thin ( a seasoning) the Goi has similar flavor to Mai fish but is richer. However it is necessary to get rid of its fishy small. Besides, the herring , with its typical rich taste, can become more appetizing when being fried with tamarind. Or it is possible to make such dishes as fish fried with lot leaves or cooked with Giang leaves, giving different tastes
